Juice, not whole leaf: why the form changes what you absorb

Two greens powders can start from the same plant and deliver very different amounts to your body. The difference is whether the plant was juiced or ground — and it decides how much of what you pay for you actually get.

A whole-leaf powder is what it sounds like: the whole leaf, dried and milled to a fine dust. It looks like it should work. The catch is where the nutrients are locked.

Plant nutrients sit inside cell walls made of cellulose. Cows can break down cellulose. People can’t — we don’t make the enzyme. So a large share of a whole-leaf powder passes through you still locked in the fiber it came in.

Cold-pressing solves that before the drying starts. Pressing the grass into juice ruptures the cell walls and frees the nutrients from the fiber. What’s left is the liquid the plant made, minus the cellulose your body was going to throw away. Dry that juice gently and it dissolves clean in water instead of settling into grit at the bottom of the glass.
